Peanut Butter Oatmeal Chocolate Chip Cookies

Yum! These NEVER last very long in my house. Take it a step further and instead of adding creamy peanut butter, add extra crunchy peanut butter. These are party pleaser cookies, sure to make your guests ask for the recipe or just, "more please!"

1cup Butter
1 cup White Sugar
2/3 cup Packed Brown Sugar
1 cup Peanut Butter
1 tsp Vanilla Extract
2 Eggs
2 cups All-Purpose Flour
2 tsp Baking Soda
1/2 tsp Salt
1 1/2 cup rolled oats
1 1/2 cups Semi-Sweet Chocolate Chips

Preheat oven to 350 degrees F.

In a large bowl, cream together the butter, white sugar, and brown sugar until smooth.  Stir in the peanut butter, vanilla, and egg until well blended. In a medium bowl, combine the flour, baking soda, and salt; add to the wet mixture and stir just until moistened.  Mix in the oats, then add the chocolate chips. Drop by the teaspoonfuls on to lightly greased cookie sheets.

Bake for 10-12 minutes in the preheated oven until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool.
